Vegan. Somewhat of a taboo term outside of the vegan community, but we are here to break that view with delicious vegan delicacies! We will start the class off by creating a flavourful beet tartare, with fresh breads, baked crackers and a tofu aoili. For the main course, guests will create their own black bean “brisket” with an almond cream and Nuts For Cheese scalloped potato. Guests will also learn how to create a vegetable demi with such depth in flavour you won’t believe it’s vegan. To finish off, guests will make the best chocolate and beet brownie, topped with textures created by Chef Thomas.
